This series is perfect for wine enthusiasts and professionals alike, if you want to gain a deeper understanding of why and HOW wine is crafted, this is a series that you won’t want to miss!

Grapegrowing and Harvesting
Ever dream of owning a vineyard? Venture out to the vineyard during the most exciting time of the year: harvest. We’ll walk the rows and discuss all that happens in the life of a vine from shoot growth to harvest and experience what characteristics winemakers desire in regard to fruit quality. Topics that we’ll cover but are not limited to include: what makes a vineyard go from good to great, tricks to grape identification, and the keys to wine grape evaluation. Be prepared to taste a lot of grapes!
“Crush” and Alcoholic Fermentation
Punchdowns, pump-overs, and delestages, oh my! We’ll follow the path of the grape from entry into the winery as it miraculously changes from simple juice to extraordinary wine. You’ll learn much more than the basics of the process as we’ll uncover winemaking philosophies and key winemaking techniques that impact wine flavors and structure. Plus, you’ll get a chance to literally have a hand in the harvest. Bring your camera…
Pressing, Aging and Maturation
Want to know the difference between oak types and what wine tastes like before aging in barrel? This course covers topics from the finishing of alcoholic fermentation to aging in the cellar. Key concepts that will be highlighted include malolactic fermentation, oak types and aging barrel size. Chardonnay lovers and big, bold red enthusiasts, this one if for you.
Blending and Finishing
The art of blending and bottling is much more difficult than at first it would appear. Geeky topics such as statistics, sensory thresholds, and case targets all come together to complicate this noble art. We’ll learn about the various aspects of blending and the bottling process step by step from tank to bottle. Plus, you’ll even create your own “House” blend using some of Idaho’s best grapes!
